Happy St. Patrick’s Day everyone!!! I’m so excited to share with you that I got to team up with one of my favorite snack foods, Pocky, to bring you a delicious donut recipe fit for the Holiday. And these aren’t just any old donuts, these are shamrock-shaped matcha green tea donuts topped with matcha green tea Pocky! Your celebration isn’t complete without a themed donut, am I right?! Plus, donuts and Pocky are basically a matcha (get it?! wink!) made in Heaven! Check out the recipe below and don’t forget to share a little happiness today with Pocky!!
For the donuts:
1 1/2 cups milk
1/3 cup vegetable shortening
2 packages instant yeast
1/3 cup warm water
2 eggs, beaten
1/4 cup sugar
1 1/2 teaspoons salt
1 teaspoon ground nutmeg
5 cups flour
Vegetable oil for frying
Shamrock cookie cutter (here)
For the icing:
1 egg white
2 cups powdered sugar
2 teaspoons matcha
Pinch of salt
1 tablespoon water
Crushed Matcha Green Tea Pocky
For the donuts:
1. Place the milk in a medium saucepan and heat over medium until warm enough to melt the shortening. Pour milk over shortening and set aside.
2. In a small bowl, sprinkle the yeast over the warm water and let dissolve for 5 minutes. After 5 minutes, pour the yeast mixture into a large bowl and add the shortening mixture.
3. Add the eggs, sugar, salt, nutmeg, and half the flour. Combine. Add the remaining ingredients and beat until dough pulls away from the bowl and becomes smooth. Transfer to a well oiled bowl, cover, and let rise for 1 hour.
4. On a well-floured surface, roll out dough to 3/8 in thick. Cut out dough using your shamrock cookie cutter. Set on floured surface, and let rise for 30 minutes more.
5. Preheat the oil to 365 degrees Fahrenheit. Place the donuts into the oil and cook for 1 minute per side. Allow to cool completely before decorating.
For the icing:
1. Combine egg white, powdered sugar, matcha, salt, and water in a large bowl and mix until smooth.
2. Dip the donuts in the icing and top with your crushed Matcha Green Tea Pocky!
