Donut-Shaped Yogurt Popsicles

As the weather’s been getting warmer, I’ve gotten more and more addicted to popsicles. Since the only things you really need to make a great popsicle are a mold, a good recipe, and a freezer, they’re basically the ideal treat to stay cool while also keeping your tastebuds happy! I’ve been trying to experiment with different shapes (because I’m all about making food fun) and I realized that I have a ton of mini donut pans perfect for making popsicles in! This is one of those ideas that I can’t believe I didn’t think of sooner, but now that I know it works I never want to eat a normal shaped popsicle again. 

This is totally not limited to a donut mold either. It can work with any silicone baking/candy mold; like these flowers or these super cool fruits (I might have to get these fruits myself, look at the pineapples)! Just put a popsicle stick in the top of mold, freeze, and you’re ready to enjoy the cutest shaped popsicle you’ve ever eaten. 

Donut forget to put the chocolate and sprinkles on top, it tastes delicious with the yogurt and totally adds the extra sugary taste that anything shaped like a popsicle should have!

For vanilla yogurt popsicles:

– 1 cup plain greek yogurt
– 2 tablespoons honey

For strawberry yogurt popsicles:

– 1 pint strawberries
– 1/4 cup sugar
– 1 teaspoon lemon juice
– 1 cup plain greek yogurt

For vanilla yogurt popsicles:

1. Mix together the yogurt and honey

2. Pour into silicone mini donut mold (I got mine here). Place small popsicle sticks into the top of each donut popicle. Put in freezer for 4-6 hours or until frozen. To remove run warm water over the mold until you can pull the popsicle out.  

3. Decorate top with melted chocolate and sprinkles!

For strawberry yogurt popsicles:

1. Combine the strawberries and sugar in a small bowl. Let stand about 20 minutes, stirring occasionally. The strawberries will soften.

2. Pour the strawberries mixture into a food processor. Add the lemon juice and combine until fruit is pureed.

3. Stir the yogurt into the strawberry mixture until combined. Pour into mini donut mold. Place small popsicle sticks into the top of each donut popicle. Put in freezer for 4-6 hours or until frozen. To remove run warm water over the mold until you can pull the popsicle out.  

4. Decorate top with melted chocolate and sprinkles!

Raise your hands if you’ll be trying these out this week! I wish I could make more, but we’re traveling to Palm Springs tomorrow for our week-long vacation, so I’ll be doing a lot of swimming and lounging to keep cool.
