So you all are already wellll aware of my obsession with frosted circus animal cookies, and even though they’re called “circus” cookies, I’ve always wanted to see other animals in the mix. And with a little unicorn magic, we’re making UNICORN frosted animal cookies today! I was a little skeptical if homemade versions of these would taste as good as the real deal, but I will be the first to say that I’m definitely on team homemade animal cookies after this post. If that still doesn’t convince you, these are completely gone already (after a midnight snacking session), and I have plans to make another batch today. Ha! I know you guys are going to have a lot of fun making these, and you don’t have to worry about carefully piping out the dreaded royal icing, because we’re dumping these babies in chocolate! Cookies AND chocolate, that’s a win-win if I’ve ever heard one, right?! 😉
3/4 cup sugar
1 stick and 2 tablespoons of butter, softened
1/2 teaspoon vanilla extract
1 egg
2 cups flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon milk
Unicorn cookie cutter (here)
Hot pink chocolate melts
White chocolate melts
Rainbow sprinkles
Slotted spatula
Wire cooling rack
1. Combine the sugar and butter in a large bowl and beat until fluffy. Add in the vanilla, egg, and milk and mix until combined.
2. Mix together the flour, baking powder, and salt in a separate bowl and set aside. Slowly add the dry ingredients to the wet ingredients and keep mixing until a dough starts to form.
3. Split the dough in half and flatten into two disks. Place the disks on parchment paper and put them in the refrigerator to chill for about 2 hours.
4. Preheat your oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.
5. Once the dough has chilled, roll it out to 1/4″ thickness and cut out the unicorn shape using a cookie cutter. Baking for 10 minutes or until the edges start to brown. Remove from the oven and allow to cool completely.
6. Melt one bowl of hot pink chocolate melts and one bowl of white chocolate melts. Place the cookies in the bowls and cover completely with chocolate. Using a slotted spatula, remove the cookies from the chocolate. Place on a wire rack so that any excess chocolate can drip down.
7. Cover the cookie in rainbow sprinkles, allow for the chocolate to dry, and viola!
Are you a unicorn person or would you stick to the normal circus animal cookies? I’m definitely all about rainbows and unicorns, so I say bring on the magic!!! You could also use a flamingo cookie cutter and make a tropical version of these too, complete with toucans and palm trees. Wouldn’t that be cute?!

HI, thEse are adorable. I am making thEm with my grandaughter tomorroW. I Went ahead and made the doUgh tonight and we are going to cut out And bake tomorrow. I have a que though. The recipe say 1 Tablespoon of milk. When do i add that to the recipe? I went ahead and added with the wet ing because that made The most sense. Just want to clArify with you.

I would say you should keep them no longer than a week refrigerated. xoSam
