Do you guys remember eating “dirt” pudding cups when you were younger?! I used to LOVE to snack on them, and they were always so fun and easy to make! Since it basically went from Winter straight into Summer in NYC, I’ve already got my mind on the beach and sunshine, so you will totally understand where I’m coming from when I say we’re making ~beach vibes~ “dirt” pudding cups today. Anddd if that still doesn’t convince you that you NEED to try this project, each pudding cup is topped with an edible flamingo and palm tree too! Who’s ready to flamingle??
Vanilla pudding
Golden Oreos, crushed
Drink umbrellas (here)
Pink fondant
Mini flamingo cookie cutter (here)
Palm tree drink stirrers
1. Remove the cookies from the Oreos (and eat the frosting inside of course 😉 ) and crush them in a food processor until you have 1/2 cup.
2. Roll out your pink fondant to 1/4 thickness and cut out flamingos with a flamingo cookie cutter or by hand with a sharp knife. Set aside and allow to harden at room temperature.
3. Assembly the pudding cups by starting with a layer of pudding, followed by a layer of crushed Oreos, another layer of pudding, and then another layer of Oreos.
4. Top the cups with the fondant flamingos, palm tree drink stirrers, and drink umbrella. Enjoy!
Now I’m ready to finally be in Palm Springs next week munching on one of these! Also, if anyone can find me a real rainbow pastel umbrella like this, I’d be eternally grateful. Ha!
