Rainbow Frosted Twinkies Recipe

3-RainbowTwinkiesI’ve been dying to do a twinkie recipe, I’ve literally had a twinkie pan lying around for 2 years, no joke. Ha! And I FINALLY figured out what to do with it! We’re making twinkies with a little twist today with rainbow swirled filling. If this isn’t the ultimate unicorn dessert, I don’t know what is. Unicorn hot chocolate and unicorn toast ain’t got nothin’ on unicorn TWINKIES!!! Grab the sprinkles, we’ve got some decorating to do!

supplies

For the twinkies:

1/2 cup flour
1/2 teaspoon baking powder
1/8 teaspoon salt
3 eggs
1/2 teaspoon lemon juice
1/2 teaspoon vanilla extract
3 tablespoons sugar
Twinkie pan (here)
Piping bag
For the filling:

4 tablespoons butter, softened
1 cup powdered sugar
2-3 teaspoons milk
Food coloring in blue, pink, and yellow
3 color coupler (here)

For the twinkies:

1. Preheat oven to 375 degrees Fahrenheit. Separate the 3 eggs into egg whites and egg yolks. Prep twinkie pan with non-stick cooking spray, set aside.

2. In a small bowl, combine flour, baking powder, and salt and set aside. In a large bowl, whip egg whites until foamy. Add in the lemon juice and whip until soft peaks form.

3. Whip egg yolks in a separate bowl. Add in the vanilla and sugar and mix until the mixture becomes pale yellow. Fold the egg whites into the egg yolks until just combined. Add in the flour mixture and fold until you can no longer see any flour.

4. Put twinkie mixture into a piping bag and fill eat twinkie cavity in the pan 3/4 of the way full with batter. Put in the oven for 6 minutes. Allow to cool completely.

 

For the filling:

1. In a large bowl beat butter and sugar until combined. Add in the vanilla and milk and mix until it becomes light and fluffy. Split the frosting into 3 equal parts.

2. Color one part blue, one part pink, and one part yellow with food coloring. Use the 3 piping bags and fill the 3 color coupler with frosting, or you can use the technique I used above to get rainbow frosting if you don’t want to buy the 3 color coupler.

3. Put the piping tip into the bottom of each twinkie and pipe frosting into the middle of the twinkie in four different places. Cut the twinkie in half to reveal your rainbow swirl frosting!

I’ve had approximately 6 of these already and it’s not even 1pm yet! Let’s just say I’m a little bit obsessed. I mean, who wouldn’t want to eat a twinkie when the inside is filled with rainbow deliciousness?!
